4 Rashers of Smoked Bacon
A little oil for Frying.
2 Large Onions
4 Cloves of Garlic
2 Large Cabbages
Warm oil in a very large pan and fry bacon until it is cooked but not brown. Remove the bacon from the pan and put in a dish under a medium grill. Roughly chop and fry onions and garlic in the pan the bacon was fried in.
Tear up the cabbages and add to the pan with enough water to cover bring to the boil, cover and leave to simmer for about an hour.
Turn the bacon occasionally to ensure it is crispy right through the edges may just start to burn. Once they are crispy remove them from the grill add any fat in the pan to the cabbages and leave the bacon on kitchen paper to cool.
Blend the cabbage in batches if necessary until totally smooth. Crumble up the bacon and store in the fridge. Serve the soup with a bit of crispy bacon on top.
