Potatoes
Fresh or Frozen Salmon Fillets
½ cup Plain Flour
1 Egg
1 cup Breadcrumbs
Garden Peas
Mint
Butter
Olive Oil
Seasoning
Fill a large pot with cold water, chop potatoes into wedges and add to the pot. Bring the pot to the boil and simmer. until the wedges are just soft. Switch oven to 200c. Strain wedges and put into a shallow oven proof dish add a couple of glugs of olive oil and your desired seasoning (I usually just add a load of fresh ground pepper). Make sure the wedges are well coated in oil and seasoning and place in oven for 30-45 minutes.
Season the flour (again I just use pepper) in a dish, beat the egg in another dish and add the breadcrumbs to another dish. Cut the salmon fillet into fingers, roll in the flour then the egg then the breadcrumbs place on a baking tray. Once the wedges are almost the colour you want out the fish fingers in the oven and cook for about 10-15 minutes turning once during cooking.
Add enough frozen garden peas for your family in a plastic jug with add a handfull of mint and a knob of butter. Microwave for 5 minutes and blend until smooth.
Serve it all together for an unprocessed, omega 3 rich, child friendly meal.
